Directions
2-3 T. olive oil
1-2 garlic cloves
3-4 green onions-chopped
2 boneless-skinless chicken breasts cut in strips
1/3 - 1/2 cup sherry (do NOT use cooking sherry. If you don't drink it don't cook with it)
2 medium or 1 large tomato, sliced
salt and pepper to taste
In a medium skillet, heat the oil. Add the garlic and chicken breast strips. Sprinkle with salt & pepper. Cook for @ 8-10 minutes.
Add wine and cook 3-5 minutes additional.
Remove chicken to a platter.
Saute the tomatoes and green onion for a minute.
Place the tomatoes and green onion over the chicken along with the pan drippings.
Good over angel hair pasta.
