Arranged alphabetically. Gives some background to particular vegetables as well as recipes. Sampling of recipes: Corned Beef and Cabbage in Horseradish Cream; Eggplant Rollatini; Chilled Tangerine and Onion Slaw; French Provincial Potato Salad; Norman Beans with Eggs; Zucchini Pickles; and a whole lot more.

I lent this book to my mother, which she promptly returned. For both of us, there were no useful recipes to try. We're really big on beets, brussels sprouts, cauliflower, eggplant, okra, string beans, turnips. You know, foods you normally do not see recipes for. Well, I guess the search continues. Truthfully, there were no recipes for us to try. Hopefully, someone else will have more luck with it!
