Assemble sandwiches: Generously spread goat cheese over bread, then spread preserves over that. Lay ham on top and put bread together. Grill on stovetop and smash the bread with the spatula as it cooks to golden brown.
Serve with salad: I usually toss together baby spinach leaves (pre-washed) sprinkle goat cheese or feta cheese on top along with chopped nuts (pecans or walnuts) and dried cranberries. Then I top with my favorite vinaigrette dressing.
