cut tops off chilis. do NOT pull out the seeds. chop as large or fine as you wish. core tomatoes and chop to desired size. I usually puree at least one then chunk the others. Same with onions. blend in a bowl and blend together. store in a jar that seals well. it can last a month or so in the fridge but loses some of it's "hotness" if stored too long.
hatch chilis come in hot and medium. I get 8 hot and 8 mediums for me. i do 16 HOT for DH.
Hatch chilis are in season in september. you can get a lot in september and freeze for use year round.
