Italian Veggie Parmesan Casserole

  • 1/2 - Eggplant cut up in 1-2" pieces.
  • 1 Large - Green zucchini cut in quarter slices.
  • 8 - Mushrooms-sliced.
  • 1/2 Medium - Onion diced.
  • 1 Cup - Marinara sauce.
  • 1/2 Cup - Parmesan cheese-grated.
  • 8 Ounces - Mozarella cheese-sliced.
  • - Garlic powder-to your liking.

Saute onions in oil until clear.  Add zucchini,mushrooms and eggplant.  Saute until all vegetables are tender.  Add sauce and mix together.  In oven safe dish layer vegetables,parmesan,vegetables,parmesan then top off with the mozarella.  Cover with foil,bake in a 350 degree oven for 20-25 minutes or until cheese is melted.

Sounds good;hope the potato beetles leave me some epplant so I can try it!
