Ingredients
  • 1 - Turkey Carass
  • 1 to 2 stalks - Chopped Celery
  • 2 to 3 - Carrots, cut in chunks
  • 1 - Onion
  • 1/2 cup - Lima beans
  • 1 cup - Split Peas
  • 1 cup - Pearl Barley
  • 1 to 2 - Bay Leaves
  • 1 tsp - Salt
  • - Parsley to taste
  • - Garlic Powder
  • - Pinch of Sugar
  • - Pepper to taste
Directions

1) Bring water to boil with turkey carass. Take off the scum from the water.

2) Add split peas, barley, lima beans, salt, sugar, garlic, parsley and bay leaves.

3) Cook 15 minutes, then add carrots, celery and onion.

4) Cook 2 hours.

You can pour into containers and freeze or eat right away. Delish!

Great for Thanksgiving leftovers!

I would suggest making stock with the carcass, allowing it to cool, then removing all the fat from the top of the stock, before proceeding with the rest of the recipe. A turkey carcass (particularly if you include the skin) produces a very large amount of unwanted fat!!
