I just ordered this from an overstocks store, and I must admit that I'm disappointed with what I see. I was looking for a book on making the oils and vinegars and storing them long-term (by canning or sealing in sterilized containers). What he's doing here is making very small one-recipe batches and using them right away in the recipes for this book. This is not a bad thing, but if you're looking for instructions on making larger batches of infused oils and vinegars and canning/preserving them, this book will not give you that information.
