Quick Lemon Poppy Seed Bread

  • 1 package - white cake mix
  • 1 3.4oz package - instant lemon pudding mix
  • 4 - eggs
  • 1 cup - warm water
  • 1/2 cup - vegetable oil
  • 4 tsp. - poppy seeds
  • Heat your oven to 350 degrees.
  • In a large mixing bowl, combine cake mix, pudding mix, eggs, water and oil.
  • Mix well.
  • Fold in the poppy seeds.
  • Pour mixture into 2 greased 9" x 5" x 3" loaf pans.
  • Bake for 35-40 minutes or until done.
  • Cool before removing from pans.


***Makes 2 loaves.


****It's ok to not have the exact size loaf pans.  But just remember, the bigger the loaf pans means less mixture will be added to each pan, which means the cook time should be less...otherwise you'll over bake them...yuck!


***You can try pouring the whole batter into one large loaf pan, but I've tried that and I couldn't get the whole thing to bake evenly.  The top center of the loaf was semi-uncooked and the rest was cooked.

great! and so easly made my kids loved them. They did take a bit longer to cook I just had to keep a eye on them.
