Spicy Overnight Pickles Step-1. Start by slicing 3-4 large cucumbers and 1 large red onion (I prefer red onion, but whatever you like) place in bowl. Step-2. Mix together 1 cup of white vinegar, 1/2 cup of water, 3/4 sugar and a handful of dried red chili's (you can sprinkle in the crushed red pepper if it's all you have, but this makes it better for eating). Bring to a boil until sugar is disovled. Step-3. Add immediately to sliced cukes and onion. This must be done while it's hot so slice it all before. It can be eaten at room temp, but is amazing cold. It's best if it sits overnight. YUMMY
