Ingredients

1 pkg. - sugar-free strawberry Jello
-
1 pint - heavy whipping cream
-
1 8 oz. pkg - cream cheese, softened
-
1/4 cup - Spenda or granulated Sweet'n'Low

1 quart - strawberries, cleaned and sliced

1 9" - baked pie crust or graham cracker crust
Directions
In small bowl, dissolve gelatin with 3/4 cup boiling water. Stir in 1/3 cup cold water. Place in freezer for aprroximately 15-20 minutes (just until it begins to gel.) In a large bowl, whip in the heavy cream until stiff (but not dry). Fold in cream cheese and Splenda. When finished gelling, fold in gelatin. Stir in strawberries (reserving a few for garnish if you like.) Pour into pie plate and let chill until firm -- about 2 hours. Top with sugar-free whipped cream.
Notes
May also be made with raspberry gelatin and fresh raspberries. An old Atkins diet recipe with fresh fruit and a crust added.
