Directions:
Cut all vegtables into bite size pieces, put in pot on top of stove with one cup rice and soup or stock. Bring to a boil, Cover, let simmer until vegetables are tender and rice is cooked. Sprinkle with shredded cheese. Salt and pepper to taste.
When I had my lap Band done this is something I could eat that was soft and tasted pretty good.
