Veggie surprise

  • 2 Large - Squash
  • 2 Large - Zucchini
  • 2 Large - Carrots
  • 1 Large - Onion
  • 1 Cup - Brown rice
  • 1 Can - Chicken rice soup or chicken stock
  • 1/2 Cup - shredded cheese



Cut all vegtables into bite size pieces, put in pot on top of stove with one cup rice and soup or stock.  Bring to a boil,  Cover, let simmer until vegetables are tender and rice is cooked. Sprinkle with shredded cheese. Salt and pepper to taste.


When I had my lap Band done this is something I could eat that was soft and tasted pretty good.

It sounds great, but it's listed under vegetarian, but with the chicken soup/stock, it's certainly not vegetarian. Use vegetable stock instead for vegetarian. I will try this soon! Thanx for posting.

sounds simple and yummy! don't be so grumbly--just swap out a can of veggie broth for the chicken broth.

I guess the surprise is the chicken soup/stock. LOL FYI - Many vegetarians would not consider that a good surprise. You might want to change the category. :-)
