Watermellon and Feta Salad

  • 2 lbs - watermelon, cut into 1-inch cubes
  • handful - fresh mint, chopped
  • 10 - Kalamata, pitted and halved olives
  • 2 tablespoons - red onion, diced
  • 1/4 to 1/2 cup - fresh Lime juice (to taste)
  • 1 cup - feta cheese

Place everything except the feta in a large bowl.  Toss gently so the watermelon pieces stay whole.

Refrigerate. (at least for 1 hr.)

Just before serving, add the feta.
