YULE LOG (Buche de Noel) Cake ingredients and instructions: ¾ cup all-purpose flour 1 teaspoon baking powder ¼ teaspoon salt 3 eggs 1 cup granulated sugar 1/3 cup water 1 teaspoon vanilla extract Grated peel of one orange or 1 teaspoon orange peel Confectionary sugar (for dusting towel) Preheat the oven to 375’F. Line a 10” x 15” rimmed baking sheet with aluminum foil and coat with nonstick cooking spray. In a small bowl, combine the flour, baking powder, and salt; mix well and set aside. In a large bowl, beat the eggs until frothy. Gradually beat in the granulated sugar, water, vanilla, and the orange peel until well blended. Gradually beat in the flour mixture just until smooth. Pour evenly into the baking sheet and bake for 10 to 12 minutes, or until a wooden toothpick inserted in the center comes out clean. Sprinkle a clean kitchen towel with confectioner’s sugar and invert the cake onto the towel; carefully peel off the aluminum foil. While hot, roll the cake and towel up jelly-roll style from a narrow end; cool on a wire rack. When cooled, unroll the cake, remove the towel. Frosting ingredients and instructions: 2 cups confectioners’ sugar 1/3 cup unsweetened cocoa ¼ cup (1/2 stick) butter, softened 1 teaspoon vanilla extract ¼ cup milk In a medium bowl, beat the confectioners’ sugar, cocoa, butter, milk, and vanilla until creamy. Reserve ½ cup of the frosting and spread the remainder over the cake. Roll the cake up again. Spread the reserved frosting over the outside of the cake. Lightly score the entire length of the log with the tines of a fork to look like bark. Chill for at least 2 hours before slicing and serving.

Notes
Note: This frosting is a little bitter to kids palettes so canned chocolate frosting is preferred and easier!! Do whatever floats your log! FYI ~ I used the above recipe but the kids hated the frosting. I usually put the cake on a decorative or glass plate with a bed of spinach leaves and fresh raspberries placed to look like holly berries, very festive looking.
