Anyone have extra zucchini?  I do!!  I usually have a pile on the kitchen counter all summer.  I can never use it fast enough.

Have any good ways to use them up?  How about preserving, any luck with freezing, and what do you make with it after? 

Here's a good recipe I just found:

Zucchini Brownies

1/2 c. oil, 1 1/2 c. sugar, 2 t. vanilla, 1 egg, 2 c. flour, 1/2 c. cocoa, 2 t. baking soda, 2 1/2 c. grated zucchini

Grease and flour 9x13 pan.  Combine oil, sugar, egg and vanilla.  In another bowl combine flour, cocoa, and soda.  Add dry ingredients to egg mixture.  Stir in zucchini and spread in pan.  Bake at 350 degrees for 25-30 minutes.

For some reason I have never liked zucchini. I can eat yellow squash all day but not zucchini.

Don´t know if you are still swimming in zukes, but I have an excellent reicpe for Zucchini Nut Chocolate Chip Cookes. I like them even better than regular choc chip cookies. And I sometimes make this zucchini and pepper salad.

My mom used to freeze zuchinni, already shredded, to make zucchini bread with later. It worked excellently.

Thanks for sharing your recipes, Robin.  I still have a few zucchini from the garden..... I'm savoring the last of them!
