I have an unopened book, called "The Harmonious Garden: Color, Form, and Texture" which sure looks like a good idea. 

What's your favorite plant that's not for the flowers?

I think mine is thyme right now.

Thyme is a good one.  I love fresh herbs, so basil, dill, any of those are great.
