I'm interested in sharing Vegetarian/Vegan Recipes....tried and true good ones are not always easy to find.  I'll start first here is an Easy one...

EZ LASAGNA

 

9 each or 1 box            Whole Wheat Lasagna Noodles

26        ounce               Prego Pasta Sauce

1          cup                  Water (to add to Sauce)

1          pkg                  Vegan Cheese

4          cups                 water packed Tofu, firm

¼         cup                  lemon juice

4          tsp                   honey

2          tsp                   salt

4          tsp                   dry basil or Italian seasoning

1          tsp                   garlic powder

1          Tbsp                olive oil (optional)

 

PREPARE…tofu ricotta style filling by mixing tofu, lemon juice, honey, salt, basil, garlic powder, and olive oil…. ADD water to pasta sauce

LAYER…in this order in a vegetable oil sprayed 9 by 11 casserole dish…1) pasta sauce 2) three uncooked lasagna noodles 3) pasta sauce 4) ricotta filling 5) grated cheese

REPEAT…steps 2-5 above, two more times if possible.

BAKE…at 350 for 1 hour

SERVE… after baking, or let sit in refrigerator for 1-2 days for best flavor.

hey, just wanted to let you know that there is a company called Arbonne and they have a whole line of weight loss products and health and wellness. They are all vegan and all natural. I am a consultant with them. THey have awesome products.  I do know a receipe for meatless meatloaf and it taste wonderful. I will try and find it.

Hi Christy.  Thanks for the lasagne recipe.  I cook primarily vegan, with an occasional lacto/ovo recipe mixed in.  Right now, I am baking every single recipe from Vegan Cupcakes Take Over the World by Isa Chandra Moskowitz adn Terry Hope Romero.  So far, the recipes have been super popular with my teens and their friends, and I even have a fanclub (of sorts) following.  The teens text me daily to find out what is the cupcake of the day.
