In the first part of the book, she shares her techniques for shopping wisely, deciphering nutritional labels, eating successfully at any restaurant or dinner party, and incorporating exercise into a regular schedule. She then provides 150 recipes for people who have a busy life but still want to get delicious, healthy food on the table--on weekdays for the family and on weekends for entertaining. Chapters include "Appetizers," "Soups," "Salads," "Sandwiches and Wraps," "Pasta and Grains," "Vegetable Side Dishes," "Soy," "Chicken," "Meat," "Fish and Seafood," and "Desserts." Bean, Roasted Garlic and Potato Puree maintains the comfort-food status of ordinary mashed potatoes but packs in more flavour and nutrition. The Roasted Vegetarian Sandwich with Brie Cheese really does contain a few rich slabs of creamy cheese. "And yes, you can enjoy Brie cheese when you're eating light--just watch the amounts," Reisman advises. She also offers lighter versions of such seemingly artery-clogging desserts as Pecan Cream Cheese Pie, Peanut Butter Mousse Pie, and Double Chocolate Chip Banana Cake.
Given Reisman's aforementioned powers, it's probably not surprising that some of the recipes she says can be prepared in 30 minutes or less actually take closer to an hour once all the ingredients are prepped. But if she can transform herself from a self-described high-fat guru to the "Queen of Light," there's hope for us all.« less
