Ingredients

1/3 cp - fresh lime juice

1/2 cp - olive oil
-
2 colves garlic - minced
-
1 tsp - salt
-
1/8 tsp - ground cayenne
-
2 15 oz - canned black beans( rinsed and drained)

2 15 oz - canned DelMonte summer crisp canned corn(drained)

1 - avocado
-
1 - chopped red pepper
-
2 - tomatoes chopped( or 1 pint grape tomatoes halfed)

1 - bunch of scallions chopped

1 - bunch of cliantro( Use 1/2 bunch chopped or more)
Directions
Place lime juice,olive oil,garlic,salt and cayenne pepper in small jar , cover and shake. In bowl combine beans, corn,chopped avocado, pepper,tomatoes,scallions, and cilantro. Shake dressing pour over salad, stir to coat. This is really awesome...... I like to add a lot of cilantro.....
