Topic: Cauliflower Casserole - SO Good!

My friend gave me this recipe and my husband made a variation of it today and it was so good! I thought maybe some of you might like it, too, so here it is, including his variation of it.

Cauliflower Casserole

2 small heads of cauliflower

1 Lb. munster cheese

1 Lb. shredded cheddar cheese

1 cup Mayonaise

1 Tblsp. mustard

Paprika

Cook cauliflower about 1/2 way.

Toss Cheddar with mayonaise and add mustard.

Mix cauliflower with cheddar cheese and mayonaise.

Place this slices of munster on top and sprinkle with lots of paprika

Bake at 350 degrees for 30 minutes, or until it bubbles.

**Our Variation: We used 3 bags of frozen cauliflower and broccoli mix - thawed under warm water and drained well first, in order to get rid of the excess water.

We used  1 1/2 lbs. of cheese ends from the deli and my husband made a cheese sauce by melting it down, adding a little corn starch and cold water to thicken it; this can be done by sight.  Then he layered a few slices of some of the unmelted deli cheese on top.

Also, we didn't have paprika and it was just fine! ;)

This really is very tasty! Maybe too many people don't eat their vegetables? ;)
