Here is how to do it for just one big (or I made four little ones) chocolate chip cookie.  Quick, easy, tasty!!  And I wasn't tempted by a couple of dozen.

Too funny, Carole!  I've made one of these before but it never dawned on me that I could eat the whole thing for just "one cookie."   It's a good idea, because when you make the smaller ones,  you know you can't each just one of them!    :)

I'm soooo glad someone has come up with a manageable portion for "one who has no self control".....put it in front of me and it won't see the light of day...I'm salivating as I type and it's a good thing it's 3 am or I'd be making this in my toaster oven....Thanks for saving my taste bud sanity...Bev from Louisville, Ky.....

Me too, Bev, if I make a whole batch, I'll eat the whole batch.  This way I get four regular size cookies, fresh baked.  I can have one or two when they are baked, the others the next day, and I won't be pigging out too much.

I'll make a batch and bake a few then freeze the rest. You can bake up a couple right out of the freezer any time you want. You put them formed on a tray until they're frozen then you can put them in a ziplock baggie. Fresh cookies in 8-10 minutes with no effort!

When I read the title of this thread, I had to chuckle;  no, I can´t say that I have EVER had a craving for just ONE cookie!  lol

I just might try this recipe, however.  I, too, thought that it would be almost just as easy to make a whole batch and then freeze the batter ... but then, that takes up valuable freezer space that I can´t justify for cookie dough.  (We just have the freezer that´s over the fridge.)  Plus, if it´s in the freezer, I willstill get to it and stuff my face.  There´s plenty of room for improvement in me in the self-control department.  blush

Far better for me not to have a whole batch in the freezer, too easy to get them out.  The whole idea was just to make a few, with no temptation for more.  It is enough of a hassle to do the few that I won't do it often, and when I do, there aren't too many left to tempt me further.
