I'm looking for a crock pot cookbook that is heavy on main dish bean recipes. I'm finding myself forced into crock pot cooking by my schedule, but I'm not impressed with most of the recipes I've found. We like beans, but the only thing in our crock pot books with beans are chili and bean soup. Rapidly boring. It doesn't need to be vegetarian, I just don't really like BigHunkOfMeat dishes. I have several good cookbooks for beans, but they do nothing in the crock pot. It just seems like a logical pairing to me--soak overnight, cook for hours! Thanks! |

I have two that have some other kinds of bean recipes in them. They do have soup and chili recipes, but also layered casseroles, stews, baked bean dishes and main course selections like Three Bean hot dishes. Fix and Forget It Cookbook - This one has a ton of recipes in the index divided by type of bean, almost two pages of three columns to a page! Recipes include Apple Bean Bake (with ham), bean casseroles, several bean and sausage recipes, and some others that sound yummy. Favorite Brand Name Slow Cooker Recipes - this one has Layered Mexican Casserole, Italian Style Sausage with Rice (and beans), Lemon Thyme Beef with Beans, and Simmered Red Beans and Rice. I couldn't find the the one I have, but there is another that looks similar - here.
