I just wanted to share that I've done 2 of the recipes from the cookbook a friend sent me a bit ago and both have met rave reviews! I really like this book so far. Its all about using a box mix as the base since they tend to be more consistent than homemade bases (Easier in the sense if you screw up the order of ingredients whole recipe goes out the window), then adding other things in for homemade flavor.
I tried the PINEAPPLE INSIDE-OUT CAKE but substitued banana cake mix for the lemon they suggest, and didnt put the extra pineapple on top just the glaze since I had to travel with it. (I prefer Duncan Hines mix-more moist than some others). It met RAVE reviews at the office (hard bunch to please normnally) and wasnt difficult at all. I have never made a glaze before but it was delicious. Just some sifted confectioner's sugar and pineapple and lemon juices. Really pleased with this one.
I am hardly a baker and people who bake from scratch might turn up their noses at this, but for messes in the kitchen like me lol, can't go wrong! Try grabbing a copy!
The Chocolate Covered Cherry cake was also great.
Next I plan to try the Orange Dreamsicle Cake and Amaretto Cake. Mmmmmm!
