Gold rush Brunch

Ingredients
  • 4 large - potatoes (Cooked and shredded)
  • 2 T. - dried onions
  • 2 T. - Parsley Flakes
  • 1 lb. - bacon/ham/sausage (Fried and chopped)
  • 8 - eggs (Lightly scrambled)
  • 1.5 lbs. - shredded cheddar cheese
  • .25 c. - butter
  • 1 c. - sour cream
  • .25 c. - flour
  • 1.75 c. - milk
  • .5 t. - salt
Directions

White Sauce:

Melt butter in skillet. Stir in flour. Saute till browned. Slowly add milk. Cook till thickened. Add sour cream after it has thickened. Add salt.

 

Lightly fry pot., onions, and parsley. Put in greased 9 x 13" pan. Then layer meat, eggs, and one lb. cheese over potatoes. Pour white sauce

over casserole and top with remaining cheese. Bake at

350* for 30-40 min. yield: 12-15 servings.


Notes

Great for a all-in-one dish breakfast!

Thank you! I'm having a brunch tomorrow morning at my house for my book club and we usually all bring something. I've been looking for the "right" thing. This is perfect!
