Glowing Jack O'Lantern Cookies 1 stick butter 1 cup sugar 1 egg 1 teaspoon vanilla 2 cups flour 2 teaspoons baking powder 1/4 teaspoon salt 1 Tablespoon milk Orange, green food coloring 1 (5-1/2 ounce) bag lemon drops, crushed (see note) Preheat oven to 350 and cover 3 cookie sheets with foil. Beat together the butter and sugar. Add egg and vanilla. Beat in flour, baking powder and salt. Add milk if batter is not too stiff. Color all but 1/8 of dough orange; color the remaining dough green. Roll 1-inch balls out of the orange dough and flatten with hand to make a pumpkin shape. Place on cookie sheets. These will be about 2-1/2 to 3 inches in diameter and will spread slightly in cooking. Roll stems out the green dough and attach to the top of each pumpkin. Carefully cut out wide spaces for the eyes, nose and mouth with a knife. Fill holes with crushed lemon candy. Bake for 8 to 10 minutes or until done. (Do not allow to brown.) Allow cookies to cool for 10 minutes, then carefully peel off the foil. Makes 2 to 3 dozen cookies Note: Crush lemon drops in the food processor. If mixture becomes sticky, add a little confectioner's sugar while chopping.
Pumpkin Cookies
Preheat oven to 375ºF. Ingredients: 2 c. sifted all-purpose flour 1 tsp. Baking powder ½ tsp. Salt ½ tsp. Baking Soda 1 c. butter 1 tsp. Cinnamon ½ c. white sugar ½ tsp. Allspice ½ c. dark brown sugar 1 c. chopped nuts 1 c. cooked pumpkin 1 c. raisins (optional ) 1 egg 1 tsp. Vanilla Glaze 1 c. 10x sugar 2-3 tbls milk 1 “Just Whites” egg white 1 Tsp Maple flavoring Directions: Cream together butter and sugar. Add and mix well pumpkin, egg and vanilla. Sift together, sifted flour, baking powder, baking soda, salt, cinnamon and allspice. Stir in chopped nuts and raisins. Drop cookies onto a greased cookie sheet and bake for 15 minutes. When cookies have cooled, dip top of cookie in glaze or drizzle glaze over cookies. This is the original recipe. Because I use fresh pumpkin I adjust it to suit my own taste. You can use canned. And I adjust the flour. This is a very wet recipe and depending on the weather, I sometimes add an additional ½ cup of flour. The dough should be damp, but hold together. I also use 2-tsps.of pumpkin pie spice mix instead of the listed spices. Scoop cookies with ice cream scoop. Dip scoop into flour before scooping.
