I received a wrong book in a deal before Thanksgiving.  PM'ed person received a response they where out of town for Thanksgiving and when they return they'd mail correct book.

I still haven't received said book.  I don't want to be rude and bug them about it.  So how much time should I wait considering the slower mail this time of year before PM'img them again?

I guess it would depend on when they said they'd be back home.

I would just send a short, simple PM stating that you were just following up on your book. Most people wouldn't mind something like that, and it is quite possible that with all the current holiday preparations that sending out your book may have slipped their mind. Life happens. If you send a follow up PM, and they don't answer within 5 days, you can use the "member not responding to PM" button in your transaction archive, which will generate a message from the PBS team to them. I've always gotten a pretty quick response from an otherwise silent member after utilizing that button. Good luck!
