This is the latest of the author's successful consumer guides on nutrition, which include The Brand Name Nutrition Counter (Bantam, 1985). Carper offers clearly written chapters on the nutrients and food componentsproteins, fats, carbohydrates, vitamins, minerals, fiber, and cholesterol. She includes lists of "best" foods and foods that interfere with absorption of nutrients. She provides data on nutrient intake levels, both too high and too low. She devotes the final third of the book to food charts with nutrient composition based on USDA data. Recommended for basic background and reference information. Jean E.
