I like meat loaf. However, I have a real problem with the tomato paste that so many people put on top. So, I came up with something different. I've decided to make this today, so I'll post it here as well.

  • 2 cans Campbell's condensed Golden Mushroom Soup (NOT Cream Of Mushroom)
  • 2 pounds ground beef
  • 1/2 cup oatmeal
  • 1/2 cup finely chopped onion
  • 1 tablespoon Worcestershire sauce
  • 1/8 teaspoon pepper
  • 1 egg, beaten
  • 3/4 soup can water
  • vegetables, cut into 1-inch pieces for the most part (see note)

Mix 1/2 can soup, beef, oatmeal, onion, Worcestershire, pepper and egg. In a 3-quart baking dish, shape the mixture into a loaf. Arrange vegetables around loaf. Bake, covered, at 375 degrees for 45 minutes. Spoon off fat.

Meanwhile, combine remaining soup and water. Pour over meat loaf and vegetables. Bake, uncovered, for 30 more minutes.

Note on vegetables. I generally use potatoes and baby carrots. However, almost any vegetable will do. Just remember that different vegetables have different cooking times. Some, like potatoes, cook quickly and only need to be peeled, cut up and added to the pan. Others, like the baby carrots, cook more slowly. I generally boil these until about half done.
