MY MOM'S AWESOME BREAD STUFFING
In a large skillet, brown lots of onions & garlic in oil.
While this is browning, moisten 3 loaves of white bread with chicken broth. When you ring out the bread, save the chicken broth for later.
Add lots of chopped celery, tyme, poultry seasoning, sage, garlic pdr, salt, pepper to moist bread; taste mixture often until you like it. Add more tyme and salt if needed. Then add 2 eggs and approx 1 can of chicken broth until moist.
Mix well and add to browned onions and garlic, turning and making sure there is enough oil in pan. Turn approx. every 15 minutes; making a "well" in the stuffing to add more oil as needed (it takes a lot of oil).
Cook low heat until stuffing is dried out.
Put in covered casserole, top casserole with dots of butter. Bake for 40-45 minutes and then remove cover and bake about 10-15 minutes. Top should get nice and brown.
