To the all knowing PBS group

I need a recipe for a dessert that's super easy to make and preferably "light'

This is an easy, low calorie and delicious desert to make. Hope you like it.

Buy a prepared graham cracker crust.

Line the bottom with two sliced bananas

Mix a tub of fat free cool whip with two small containers of Dannon strawberry and banana(fruit on the bottom).

YOGURT. Refrigerate overnight or at least 4 hours and serve.

Trifle is very easy, and you can make it with angelfood cake (store bought) and fat-free pudding to cut back on fat.  Just cut the cake into 2 inch chunks, then layer in a glass bowl with the pudding flavor of your choice.  You can also layer with fruit- berries are great in trifle.  Top with some whipped cream or fat-free non dairy whipped topping.

1 pint low fat cottage cheese

1 small tub fat free cool whip

1 can crushed pineapple

1 small box strawberry jello

Fold all ingredients together.  Refrigerate until ready to serve.  Very yummy!!

Blueberry Delight


1 8oz. package cream cheese


1 8oz container of sour cream


1 cup sugar


1 package blueberry jello (or sugar free jello)


1 can blueberry pie filling


1 bag of walnut pieces ( optional )



Mix blueberry jello and hot water. Do not add cold water.
Add blueberry pie filling and put in refrigerator to set about 1 hour.
Let cream set out to soften.


Using mixer blend cream cheese, sour cream, and sugar until smooth.
Spread on top of set jello and garnish with walnut pieces (optional)

Let chill about 1 hour and serve.

Light Strawberry Shortcake from Cooking Light

Ingredients

 Strawberries:
cups sliced strawberries
1/4 cup sugar
 
Shortcake:
cups all-purpose flour
1/4 cup sugar
teaspoons baking powder
teaspoon grated lemon rind
1/2 teaspoon salt
1/4 teaspoon baking soda
tablespoons chilled butter, cut into small pieces
2/3 cup fat-free buttermilk
1/2 teaspoon vanilla extract
 Cooking spray
large egg white, lightly beaten
1 1/2 teaspoons turbinado sugar or granulated sugar
 
Remaining ingredients:
cups frozen fat-free whipped topping, thawed
 Whipped topping (optional)
 Whole strawberry (optional)

Preparation

To prepare strawberries, combine strawberries and 1/4 cup sugar; cover and chill 1 hour.

Preheat oven to 400°.

To prepare shortcake, lightly spoon flour into dry measuring cups; level with a knife. Combine flour and next 5 ingredients (flour through baking soda) in a large bowl, stirring with a whisk. Cut in butter with a pastry blender or 2 knives until mixture resembles coarse meal. Combine buttermilk and vanilla; add to flour mixture, stirring just until moist (dough will be sticky).

Turn dough out onto a lightly floured surface; knead lightly 4 times with floured hands. Pat dough into an 8-inch circle on a baking sheet coated with cooking spray. Brush top with egg white; sprinkle with 1 1/2 teaspoons sugar.

Bake at 400° for 15 minutes or until a wooden pick inserted in center comes out clean. Cool 10 minutes on a wire rack. Carefully split shortcake in half horizontally using a serrated knife; cool layers separately on wire racks.

Place bottom half of shortcake, cut side up, on a serving plate. Drain strawberries, reserving juice; drizzle juice over bottom half of shortcake. Spread 2 cups whipped topping over shortcake layer; arrange strawberries over whipped topping. Top with remaining shortcake layer, cut side down. Garnish with whipped topping and whole strawberry, if desired.

Take 2 boxes of jello and let it harden .

Jusr before you are ready to serve it , take vanilla ice cream ,have it a little soft mix it together in the bowl of jello and then serve . (mix by hand ) about 3 or 4 scoops .Its delicious !!!!!!!!!

Buy those angel food cake desert shells in the store and fill them with fresh berries mixed with a bit of sugar.  Add whip cream on top with a sprinkle of cinnamon!  Easiest healthy dessert in the world!  (and you can make them bigger if you add a second layer).  Alternatively.... bake a yellow sheet cake in 13x9 and use slices of that in substitue for the dessert shells.

There is a variation on Lesley H.'s trifle recipe, that I ran across in The White Trash Cookbook.  You line the bottom of the dish with Twinkies (yes, Twinkies from Hostess Cupcakes!), then make whatever flavor of pudding you like, and pour over the Twinkies layer.  The next layer is some kind of fruit, and canned pie filling is okay for this, if you don't use fresh fruit, or canned fruit with some of the glaze one can buy at the grocery nowadays.  Top it all off with Cool-Whip, and you have White Trash Trifle.

My favorite light desert is grape salad, I always get asked to bring it to famiy gatherings.

4 lbs total green and/or red seedless grapes

 


Dressing:


16 oz. cream cheese softened
8 oz. sour cream
1/2 c. sugar or splenda
1/2 tsp. vanilla

1 cup chopped nuts

2 tsp brown sugar

 

 

Mix all of the dressing ingredients until smooth and mix with grapes.  Sprinkle brown sugar on top if desired. Very easy and very, very good

Sorbet Melon parfait

 

in a martini glass or shallow dessert dish, add 2-4 balls of each water melon, canaloupe, and honey dew, then just before seving add 1-2 tablespoons of sparkling wine, and top with a small almost melon ball sized scoop of a tropical fruit sorbet such as mango.  it is very light very elegant and Very tasty.

 

  more casual?  Anglefood cake cubes, with berry sauce.  I love blackberries but your favorite frozen berry will work great. put angel food cake into serving bowls, add berries to a saucepan, over medium heat.  add about a teaspoon or two of cornstarch and a bit of sugar, (to taste) and smash berries a bit while they are defrosting in the pan.  then just pour over anglefood cubes in bowl.  Vanilla Ice cream is also  nice with this

Light, easy, and very impressive to those that you don't give the secret to:

One angel food cake

Fresh strawberries

Cool Whip

Slice a very thin layer off the top of the cake and set aside.  From the top cut a 'well around the middle of the cake leaving about 1/2 - 1" on both sides of the well.  Pick out the cake leaving the 'well'.  Cut the pieces of cake into chunks and mix with cool whip and sliced strawberries.  Refill the 'well' with the strawberry mixture.  Cover with cool whip and decorate with strawberries.  Refrigerate until time to eat.

Variation:  For holidays, instead of using cool whip and strawberries in the 'well', I've used peppermint ice cream for Christmas and strawberry ice cream for Valentines Day.
