Does anyone know why it takes a week or more before the books we buy from PBS are shipped??  I respond and ship daily and am just wondering what the holdup is...

Do you mean books from teh PBS marketplace or books from other PBS members?  

If it's members: not everyone can ship daily and as long as they are within the time frames allowed by PBS then they aren't breaking any rules if they use the fully allotted time.
 

If you are talking about books ordered from the markeplace: then it's probably because PBS themselves don't actually ship the books.  The books are shipped through different distributors. PBS probably has no control over how quickly they ship.

The PBS Marketplace often has atrocious ship times. I think they say 10-15 business days, and I've had it take even longer than that. 

There are at least two different companies in the Marketplace.  One has the deep discounted overstock, and a different company for the less discounted newer releases.
