1C. ALL-PURPOSE FLOUR, SIFTED, 1/4C. SUGAR, 4 TSP. BAKING POWDER, 3/4TSP. SALT, 1C. YELLOW CORNMEAL, 2 EGGS, 1C. MILK, 1/4C. VEGETABLE SHORTENING. PREHEAT OVEN 425. GREASE AN 8-INCH SQUARE BAKING PAN OR A CAST -IRON SKILLET. SIFT FLOUR WITH THE SUGAR, BAKING POWDER, AND SALT INTO A LARGE BOWL. STIR IN CORNMEAL AND ADD EGGS,MILK, AND SHORTENING, USING A MIXER BEAT JUST TILL SMOOTH, DO NOT OVER BEAT. POUR INTO THE PREPARED PAN. BAKE FOR 12-15 MINS. AND SERVE HOT.
