Boil water & cook pasta while working on clams sauce.
Make a roux with the flour and butter – give it a chance to brown. Add minced garlic. Slowly add clams with their juice. Use a whisk to make sure there are no lumps. Add salt, pepper and herbs. Let simmer until thickened.
Drain cooked pasta and put into large bowl. Toss with clam sauce.
*** If you wish, you can add chopped spinach (1/2 box of frozen chopped spin) & diced tomatoes (1/2 can) to the clam sauce while simmering. It adds pretty color and nutrients.
