I bought 2 mailing labels with prepaid postage & delivery confirmation through PayPal yesterday. Then I didn't make it to the P.O. on time. I didn't want to just drop them in the mailbox as I want them to hand scan the packages so I can prove they were sent.

What will happen now that the label reads yesterday's date? Can I still use the labels or do I have to cancel these labels (via PayPal) & order and print out new labels with today's date? Or can I still use them for today?

You can prove that the package was mailed because the delivery confirmation barcode will be scanned somewhere along the way, so you can mail the package in a blue box (or make an extra trip to the PO).  I do that will almost everything I mail.

As for the dates, I've never had a problem mailing pacakges that are a day or two later than the date the postage was purchased & printed.  But I'm sure some people will have stories of packages that didn't go through because they were posted after the date purchased. 

There is also an option in PayPal that lets you purchase & print postage with a date in the future.  I think it will let you go two days into the future.

As long as you don't wait for several days, you should be ok with yesterday's date.  I think it's best to mail on the same day, but you should be ok in this case.

As for hand-scanning, keep in mind that they are not required to do this and may refuse you as well, unless you are paying for something at the counter.  The only way you can get them to scan on acceptance is if you have a bulk scan sheet, which is not available through all postage methods.  PayPal has a tool called Multi-Order Shipping that will print these though.
