Ingredients
  • 1 can - peas
  • 1 can - green beans
  • 1 can - carrots
  • 1 can - tomatoes
  • 1 lb - hamburger
  • 1 ea - chopped onion
  • 1 small can - V8 juice
  • 1 quart - tomato juice
Directions

So simple!  Brown the hamburger & onion.  Drain.  Open all cans of veggies and drain excess liquid.  Dump everything into big pot and heat!

I've also added shredded cabbage and canned potatoes.  Can spice it up with cajun seasoning or chili powder.

I thought this recipe sounded great, but the sodium from all those canned goods would be out of sight for a cardiac patient. I tried this one with frozen veggies, low sodium V8 juice, and very lean ground beef. I added the shredded cabbage and some parboiled red potatoes, and they were a great addition. I couldn't find a low sodium tomato juice, but I did use plain crushed tomatoes with no salt added. This was a great recipe! I hope you like my low-sodium version too!
