Topic: Need Receipe's for Strawberries?? Anyone?

I have a ton of strawberries and they are going to go rotten soon.  Besides strawberry pie and jam (unless you have an awesome one) does anyone have any suggestions what I can make with them or have a receipe I can try?    I have about 2 quarts.

I like to freeze them and make fruit smoothies. I don't have an exact recipe because I just use whatever I have on hand - bananas, milk, yogurt, orange juice, a little honey if you like it sweeter, a couple of ice cubes if you want it really cold, etc.

It doesn't use too many but they are very good in a salad. Use dark green lettuce and spinach, candied nuts and sliced strawberries. Chunks of blue cheese are a good addition. Top with raspberry or red balsamic vinaigrette. Yum, makes me want to fix one just writing about it. Hope you found a use for yours before they went bad. If I have berries I am not going to get around using before they go bad I just put them in the freezer.

I make strawberry, pb, jelly, and banana sandwiches. Just put on peanut butter and strawberry jelly. Then add sliced strawberries and bananas. It's delicious :)

thanks - I like these ideas.   I made strawberry pancakes for dinner tonight (healthy I know - snort).  Still have a ton -  I think they will head for the freezer - at least this round.

If you like shortcake, the frozen strawberries work fine for mashing for shortcake. My mom likes to make strawberry shortcake in January with frozen strawberries - I swear they taste sweeter because we haven't had them in months :-)

You can make stuffed strawberries.  Slice a little off the bottom of the berries (so they stand up) , hull out the middle and stuff with:

cream cheese
a tablespoon or so honey
a handful of mini chocolate chips.

Just beat the cream cheese until fluffy, add the honey, mix to combine and thow in the chocolate chips.

Or how about strawberry bread or muffins?  You could even freeze those for later, if you want. 

I found this recipe at www.allrecipes.com and there are a bunch of other ones there. 

 

STAWBERRY MUFFINS

  • 1/4 cup canola oil
  • 1/2 cup milk
  • 1 egg
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1/2 cup white sugar
  • 1 3/4 cups all-purpose flour
  • 1 cup chopped strawberries
  1. Preheat oven to 375 degrees F (190 degrees C) oil an 8 cup muffin tin, or use paper liners.
  2. In a small bowl, combine oil, milk, and egg. Beat lightly. In a large bowl, mix flour, salt, baking powder and sugar. Toss in chopped strawberries and stir to coat with flour. Pour in milk mixture and stir together.
  3. Fill muffin cups. Bake at 375 degrees F (190 degrees C) for 25 minutes, or until the tops bounce back from the touch. Cool 10 minutes and remove from pans.

Thanks for the ideas.  The strawberry muffins sound good - I think I will have to give them a try.  I always make and freeze banana bread - have no idea why strawberry bread didn't register - a duh moment :) 

My sister is visiting this weekend.  Maybe I will make the muffins for breakfast so we can have an early start to the Libarary sale :)
