I finally was able to pick vegetables and fruits from my garden and I am sitting here looking at them wondering what I could make that uses most or all of these. I would especially like to surprise my hubby (the real cook of the family) with a meal from the garden besides a salad. Any ideas?

I have 12 banana peppers, 8 bell peppers, 3 tomatoes, 2 large zucchini, 5 carrots, about 3 pints of snap beans, and about 6 pints of blackberries.

Not ALL of them in one recipe, but you could sure make some tasty ratatouille with those peppers, tomatoes, and zucchini!   (You'd have to get an eggplant......did any of the other veggie gardeners raise any of that?)

And how about a blackberry cobbler?  with a little half-and-half on a bowlful of it, perhaps?

ooo... ratatouille sounds real good and so does the cobbler... we used to eat peach cobbler for breakfast when I was little, pour milk right over the hot cobbler and scarf it down. Havent had that in years...mmmm yum! sure the kids will eat the carrots before long lol

Thanks for the ideas!

veggie fajitas,  minus the blackberries, which you can eat over ice cream or use to make hand pies or a cobbler.

Actually, all of those ingredients would also make a great cold marinated veg salad to serve with warm crusty bread.  Just add little fresh herbs and a vinagrette to them and let sit for a bit.

Nice work, btw.  That is a great haul and looks a lot like what I have on my counter from today's pick!
