Dickson has the Dragon and the George or Dragon Knight series.  Several books modern day guy and his girl friend get magically translated to an alternate dimension where he is turned into a dragon who has to rescue his girlfriend.

Christopher Stasheff has the Warlock in Spite of himself series.  Several books where the main character lands on the planet Gramary in his space ship but finds he has to deal with dwarves, warlocks, witches, little people and the Church.

Christopher Stasheff has another series called the Wizard in Rhyme series.  Several books, magic, dragons, elves, etc.

The Dragonriders of Pern series by Anne McCaffrey is very good.

The first in the series: Dragonflight (Dragonriders of Pern Bk 1) :: Anne McCaffrey

Wow, I haven't read a die-hard Fantasy with Elves and Trolls in a minute. :) I need to pick one up!

Lorna Freeman has a great series, that's relatively under the radar as far as I know. It's amazing! But the critters tend to be more Anthro, but there's a whole nice Realm of Fae! It starts off with Covenants

And do you remember the movie Willow? Well George Lucas and Chris Claremont continued the story of Elora Dannon in Shadow Moon Shadow Dawn Shadow Star. It's fun! :)

You might give "Three Hearts and Three Lions" by Poul Anderson a try.  Has fairies, a dragon, a dwarf, elves, and a magic sword.

Dragonhaven by Robin McKinley might be something you're interested in.  It's more realistic but has dragons.  Also along those lines is a YA book Voices of Dragons by Carrie Vaughn.  Might not be exactly what you're looking for, but pretty damn amazing books.

Naomi Novik's series about the dragon Temeraire is very good.  The first is called His Majesty's Dragon.

Don't forget the classic TSR books "Dragonlance".  Many to chose from.

If you like Tolkien, try out Dennis Mckiernan, the same sort of thing, lots of different races; Elves, Dwarves, Warrows (sort of like hobbits), and more. Big epic battles, good versus evil! They are amazing. I'd start with the duology "Into the Fire" and "Into the Forge". Also, you should check out the Tairen Soul series by C.L Wilson, not dragons per se, but still fantastic, although it's definitely more of woman's fantasy... there's a love story, haha. Not sure how you feel about that. Oh, and the Chronicles of Elantra series is excellent, Again, lots of different races, action&adventure, and the author's world building is just...wow!! (Same with C.L Wilson).
