Ingredients
  • 1/2 C - Apple, diced
  • 8 oz - Brussels sprouts, trimmed & quartered
  • 2 Tbs - apple cider
  • 2 tsp - olive oil
  • 1 tsp - fresh thyme, minced
  • 1/4 tsp - salt
  • 1/8 tsp - black pepper, freshly ground
Directions
  1. Preheat oven to 375
  2. Combine apple & Brussels sprouts in a 11x7-inch baking dish.  Add apple cider, olive oil, thyme, salt & pepper; toss well. 
  3. Bake  for 25 minutes or until sprouts are tender.

Notes

I don't peel the apple but you can.  I've used orange juice when I didn't have apple cider on hand; worked well.
