Preheat oven to 350 F.
Rinse and pat dry chicken. Squeeze 1 lemon for juice and set aside. Cut remaining lemon into chunks and place inside chicken with 2 sprigs or 2 tsp. of rosemary. Place chicken in large roasting pan.
In a cup, combine: 2 tsp. rosemary, 2 tbsp. of olive oil, 1 tsp. salt, 1/4 tsp. pepper. Brush over chicken.
Place washed, halved potatoes around chicken in roasting pan. Combine: reserved lemon juice, 2 tbsp. olive oil, 1 tsp. salt and 1/4 tsp. pepper. Bruish over potatoes.
Bake for 1 hour and 15 minutes.
Add green beans and toss with potatoes. Bake another hour or until chicken measures 180 degrees.
This dinner is sooo yummy.! I have cooked 2 at a time and frozen one to reheat another day and it's just as good. Best with fresh rosemary and green beans!
