Ingredients
  • 1 1/2 lbs - ground lamb or beef
  • 1 large - onion, peeled and finely choppied
  • 3 large - potatoes, peeled and cubed
  • 4 - carrots, peeled and chopped
  • - water to cover
  • - salt and pepper to taste
  • 1 tbsp. - Worcestershire sauce
Directions
Brown meat in large skillet over moderate heat. Add onion as meat begins to color. Stir occasionally; break up large chunks of meat with spoon. Drain off fat. Add remaining ingredients; mix well. Bring to boil. Reduce heat to low; cook 1 hour. Stir occasionally. Mixture should be thick when done; vegetables should be tender. Serve slumgullion over mashed potatoes.

Notes
While reading The Courtship by Anna Deforest, the heroine, an Irishwoman named Miranda, made Slumgullion stew, which from the remarks of the diners, must have been mouthwatering delicious. So, I looked up the recipe and found the one that sounded the most similar to the one described in the book. I wanted to share and also plan on cooking for myself soon!

My Mom used to make that. I thought no one else in the entire world made it since she used to make us stuff all the time. Good to know she was right on and we were eating something ethnic--Irish in this case. Thanks, Cindy
