Milk Pie

 

2 1/4 cup whole milk (do NOT use low-fat or non-fat)

½ cup sugar

2 eggs

1 ¼ Tablespoon flour

1 ¼ Tablespoon cornstarch

1 prepared graham cracker pie shell

 

Microwave milk seven minutes on high in glass bowl. Meanwhile, beat sugar and eggs together until fluffy. Add flour and cornstarch. Beat until smooth. Add to milk and beat until smooth. Microwave one minute at a time and beat after each minute. Continue until mixture gets semi-thick. Pour into pie shell and place in refrigerator to set.

very rich - got the recipe from a friend

Layer Bar Cookies

 

½ cup butter

1 cup graham cracker crumbs

1 6-oz pkg semi-sweet chocolate chips

1 6-oz pkg butterscotch chips

1 1/3 cup flake coconut

½ cup chopped nuts

1 15-oz can sweetened condensed milk

 

Melt butter in 13x9x2 pan. Sprinkle crumbs evenly over butter. Over crumbs, sprinkle chocolate, butterscotch, coconut and nuts. Pour milk over all. Bake 30 minutes at 350. Cut when cool.

 

 

I grew up with these - one of my mom's recipes

Chocolate Chip Light Brownies

 

Cream together:

1 cup butter/shortening

½ cup sugar

½ cup brown sugar

 

Add:

2 slightly beaten egg yolks

1 teaspoon water

1 teaspoon vanilla

 

Add:

2 cups flour

1 teaspoon baking powder

¼ teaspoon salt

¼ teaspoon baking soda

 

Spread in greased 9x13 pan.

 

12 oz chocolate chips

2 egg whites

1 cup brown sugar

 

Sprinkle chips over top of brownie mixture and press down. Beat egg whites until stiff. Gradually add brown sugar. Spread mixture smoothly over top. Bake 25 minutes at 375.

 

 

also made these a lot growing up - from an Amish cookbook

Marshmallow Brownies

 

¾ cup shortening

1 1/3 cup sugar

3 eggs

1 1/3 cup flour

½ teaspoon baking powder

2 Tablespoons cocoa

1/3 teaspoon salt

1 ½ teaspoon vanilla

 

Mix in order given. Bake at 350 for 20 minutes. Take out of oven and cover with miniature marshmallows. Put back in oven for 3 minutes.

 

Icing

¾ cup brown sugar

1/3 cup water

3 Tablespoon cocoa

4 Tablespoons butter

1 ½ teaspoon vanilla

 

Boil for 3 minutes. Let cool.

Add:  2 cups powdered sugar.

 

Drizzle over top of marshmallows.

I found this recipe in a recent cookbook swap.  Sounds intriguing.

Knock You Nakeds

1 pkg (18-1/2 oz) German chocolate cake mix

1 cup chopped pecans

1/3 cup plus 1/2 cup evaporated milk, divided

3/4 cup butter, melted

60 vanilla caramels, unwrapped (one 14 ounce pkg)

1 cup semisweet chocolate morsels

In a large mixing bowl, combine dry cake mix, pecans, 1/3 cup evaporated milk and melted butter.  Press half of the batter into the bottom of a greased 13x9x2-inch glass baking dish.  Bake in a preheated 350-degree oven 8 minutes.

In the top of a double boiler over simmering water, melt caramels with remaining 1/2 cup evaporated milk.  When caramel mixture is well mixed, pour over baked layer.  Cover with chocolate morsels.  Pour remaining batter on top of morsels.  Return to preheated 350 degree oven and bake 18 minutes.  Let cool before cutting into squares.

Used to be able to get Ranger cookies from a Kroger store near where my mother lived, was hooked on the darn things.  Now am trying to find a recipe for the cookies but the recipes I find have only egg and vanilla for liquid and by the time you mix the flour, oatmeal, sugar, brown sugar and shortening, rice krispies together the "dough" will not hold together to form a walnut size ball before baking.  Anyone have a good recipe for Ranger cookies with maybe more liquid ingredients or something?

Snicker Cheesecake

  • 5 tablespoons butter, melted
  • 1 1/4 cups chocolate graham cracker crumbs
  • 1 tablespoon white sugar
  • 3 (8 ounce) packages cream cheese
  • 3 eggs
  • 3/4 cup white sugar
  • 2 teaspoons vanilla extract
  • 3 -4 regular size snicker bars, chopped

DIRECTIONS

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a small bowl, combine the melted butter, graham cracker crumbs and 1 tablespoon sugar. Press into the bottom of a 9 inch springform pan. Bake in preheated oven for 10 minutes. Allow to cool.
  3. In a large bowl, cream the 3/4 cup of sugar and cream cheese together until smooth. Add eggs, one at a time, and vanilla. Stir in chopped candy bar, and pour into baked crust.
  4. Bake at 350 degrees F (175 degrees C) for 45 minutes. Let cool and carefully remove the springform pans side.

*drizzle with chocolate and caramel topping if desired

Strawberry Pizza

Crust:  

1   Cup   Flour

1   Cup   Graham Cracker Crumbs

2               Sticks Margarine

1   Cup    Chopped Nuts

Bake in 350* preheated oven until lightly browned. Let cool.

 

First Layer:

1   8oz Pkg   Cream Cheese

3   Cups       Confectioner's Sugar

1   12 oz      Cool Whip

Mix together and layer on cooled crust.

Top Layer:

1-1 1/2         Container Strawberry Glaze (I buy this)

If you want to make the Glaze:

1   Cup    Sugar

3   Tbs   Cornstarch

1   Cup    Water

1   3 oz   Box Strawberry Jello

 

Very Pretty and easy.

Here's my family's current favorite.

Carnival Cruiselines Warm Chocolate Melting Cake

  • 7 oz good quality dark chocolate (look for 75% to 85% cacao)
  • 7 oz butter (not margarine!)
  • 5 eggs
  • 1 c sugar
  • 3/4 c flour
  • Vanilla ice cream

Melt chocolate and butter together over low heat. Stir until smooth and let cool enough so that it won't cook the eggs.

Beat eggs and sugar together. Stir in chocolate mixture, then flour.

Spoon batter into an ungreased muffin tin, filling each pan about 1/4" from the top. You can refrigerate the batter here. If you use cupcake wrappers in your muffin tin, the individual cakes will solidify enough that you can remove them and put them in another container and just put the number you need back into the muffin tin to bake. Keep the rest in the fridge and eat within a few days.

Preheat oven to 400 degrees F. Bake 9 minutes if cakes are at room temperature, 10 minutes if cold. Serve warm cake with a scoop of vanilla ice cream. The center of the cake will be hot and have the consistency of a thick fudge sauce.

I know Im late but here goes. I make these every year at Christmas and get lots of requests for them. In  fact I trade a batch for a co-worker's home made tamales

 
99% Fat Free Yummy Biscotti:
 

2-1/4 cup flour

1 cup sugar 

1 Tsp baking POWDER

1/2 Tsp Baking SODA

1 Tsp Cinnamon

1/2 Tsp Nutmeg

2 eggs

2 egg whites

1 TBS Almond or Vanilla Extract (I use Vanilla)

3/4 cup sliced almonds

6 oz dried cranberries

 

Combine dry ingredients in med. mixing bowl. Whisk whole eggs, whites and extract in another bowl. Add to dry ingredients (I add the dry ingredients to the eggs a little at a time to make it easier to mix). Its going to end up being a big ball of dough. Add dried cranberries and almonds, mix thoroughly.

On floured surface, divide batter in half and roll each half into a log (that fits a standard cookie sheet). Flatten log by patting it (not way flat, just about 1-1/2 -2 inches wide). Bake 30 minutes in 325 degree oven. Remove and let cool. Reduce oven to 300. Remove logs and slice into slices. Place slices back on cookie sheet standing up. Bake again for 20 minutes til toasted.

Sweet Potato Pie

  • 1 1/2 cups sugar
  • 3 eggs
  • 1 1/2 cups cooked and mashed sweet potatoes
  • 1 tsp vanilla
  • 1 teaspoon cinnamon (or to taste)
  • 1 stick butter, melted
  • 1/2 cup evaporated milk
  • 1 deep dish 9-inch pie shell, unbaked



Preheat oven to 350° F.

Beat together sugar and eggs. Add potatoes, vanilla, cinnamon, and melted butter. Add milk and mix well.

Pour into unbaked pie shell for and bake 1 hour in preheated 350 degree oven.

 

Pecan Pie

  • 2 cups sugar
  • 1 teaspoon vanilla
  • 2 tablespoons flour
  • 1 stick butter, melted
  • 3/4 cup buttermilk
  • 2 cups chopped pecans
  • 3 eggs
  • 2 uncooked pie shells



Preheat oven to 350° F.

Add all ingredients except nuts to melted butter. Mix well and add nuts. Pour into 2 unbaked pie shells.

Bake at 350 for 30 minutes or until set. Be sure top doesn't over brown

 

Lemon Bars

  • 1 cup (2 sticks) butter
  • 1 cup sugar
  • 2 cups flour
  • 1 1/4 cup oatmeal (not instant)
  • Juice of 3 lemons
  • Zest of 2 lemons, chopped fine
  • Zest of 1 orange, chopped fine
  • 1 (14-ounce) can sweetened condensed milk



Preheat oven to 350. Coat a 9 by 13" pan with cooking spray.

Cream butter and sugar, then add flour and oatmeal to make dough (it will be a little crumbly). Stir juice and zest into milk. Press two-thirds to three-quarters of dough into pan. Spread lemon/milk mixture evenly over top of dough. Sprinkle remaining dough over top.

Bake for 30 to 35 minutes until golden. When cool, slice into 1-inch squares

Date Stuffed Spice Balls

  • 1 box pitted dates
  • pecan halves
  • 1/2 cup sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 3 teaspoons pumpkin pie spice
  • 3//4 stick butter, softened
  • 1 1/4 cup self rising flour
  • confectioners sugar



Preheat oven to 375 degrees.

Combine sugar, egg, vanilla, pie spice and butter in a large mixer bowl. Mix at low speed for 1 minute. Gradually add flour and beat 1 more minute.

Stuff each date with 1 pecan half. Pinch small ball of dough and wrap around stuffed date. Roll gently in hands to form ball.

Place on ungreased cookie sheet and bake for 10 to 13 minutes. Cookie will begin to crack on top. Roll warm cookies in confectioners sugar and cool on rack.

WHOOPIE PIES

BAKE AT 400* FOR 8 TO 10 MINUTES.  MAKES ABOUT 2 DZ. CREAM FILLED COOKIES

COOKIES

  • 6 TBSP. SHORTENIN
  • 1 CUP SUGAR
  • 1 EGG
  • 2 cups sifted all purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup buttermilk
  • 1/4 tsp. salt
  • 1 tsp. vanilla
  • 1 tsp. baking soda dissolved in  1/2 cup hot water

CREAM FILLING

  • 3/4 cup shortening
  • 2 1/2 to 3 cups sifted confectioner's sugar
  • 1 egg white
  • 1 tsp. vanilla

MAKE COOKIES: Cream shortening until light, then add
sugar gradually, creaning all the while.  Beat in egg.
Sift flour, cocoa and salt onto wax paper.  Combine
buttermilk and vanilla.

Add sifted dry ingredients to creamed mixture
alternately with buttermilk-vanilla combination,
beginning and ending with dry ingredients.  Beat in
baking soda-water solution. (Mixture will be more the
consistency of a thick cake batter than a  cooky
dough.)

Drop by rounded teaspoonsful onto well-greased cooky
trays, spacing about 1 1/2 inches apart and making
cookies as nearly uniform in size and shape as
possible.

Bake in a hot oven (400*) 8 to 10 min., or until a
finger pressed in center of a cooky leaves a print
that springs back slowly.  Remove at once to wire rack
to cool.

PREPARE CREAM FILLING

Beat shortening and 1 cup of the confectioner's sugar
until fluffy.  Beat in egg white and vanille.  Beat in
enough of the remainig sugar to make a grosting of
good spreading consistency.

Sandwich cookies together with a thick layer of
filling.

Cinnamon Roll Cookies

Ingredients:

Cookies:

  • 1 box yellow cake mix
  • 2 tsp cinnamon
  • 1/3 cup oil
  • 2 eggs
  • 1 cup cinnamon chips (made by Hershey's)
  • 1 can cream cheese frosting or your own homemade version

Cinnamon Sugar Mixture

  • 1/2 cup sugar
  • 1 tsp cinnamon

Mix all ingredients together. Roll into 1 inch balls.  Roll the balls in cinnamon sugar mixture:

Bake at 350 for about 10 minutes.  

Remove cookies to wire cooling rack and put icing on cookies as soon as they come out of oven so it melts on top.  Make sure to have a sheet of foil or waxed paper under the cooling rack.

BUTTERMILK COFFEE CRUMB CAKE

BAKE AT 350* FOR 45 MINUTES.  MAKES ONE 13X9X2 LOAF.

  • 2 1/2 CUPS SIFTED ALL-PURPOSE FLOUR
  • 1 TSP. GROUND CINNAMON
  • 1 TSP. BAKING SODA
  • 1 TSP. SALAT
  • 1/2 CUP BUTTER OR MARGARINE
  • 2 CUPS FIRMLY PACKED LIGHT BROWN SUGAR
  • 1 LARGE EGG
  • 1 1/2 CUPS BUTTERMILK

CRUMB TOPPING

  • 1/2 CUP SIFTED ALL-PURPOSE FLOUR
  • 1/2 CUP FIRMLY PACKED LIGHT BROWN SUGAR
  • 1/4 CUP BUTTER OR MARGARINE

1.  Sift flour, cinnamon, soda and salt onto a piece
of waxed paper.  Reserve.

2. Beat butter until light in a large mixing bowl,
then add sugar gradually, continuing to beat until
light; beat in egg.

3.PREPARE CRUMB TOPPING: Mix flour and sugar in a
medium-size bowl, then cut in butter with a pastry
blender until the texture of caorse crumbs.

4. Finish makeing cake batter: Add sifted dry
ingredients alternately to creamed mixture with
buttermilk, beginning and ending with dry ingredients.

5. Pour batter into a well-greased 13x9x2 baking pan,
scatter "crumbs" evenly on top.

6. Bake in a moderate oven (350*) 45 minutes, or until
cake begins to pull from sides of the pan and the
center springs back when pressed with finger.  Cool
cake in pan on a wire rack 15 to 20 minutes before
cutting.

Pumpkin Streusel Pie

  • 15 oz can pumpkin puree
  • 14 oz can sweetened condensed milk
  • 2 egg yolks
  • 1 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/2 tsp ground nutmeg
  • 1/2 tsp salt
  • 2 egg whites
  • 9" unbaked pie shell
  • 2 tbsp flour
  • 1/4 cup packed brown sugar
  • 1 tsp ground cinnamon
  • 2 tbsp butter, chilled
  • 1 cup chopped walnuts

Directions:

 

Preheat to 425 degrees. In a large bowl, mix together the pumpkin, condensed mjilk and egg yolks. Stir in 1 tsp cinnamon, ginger, nutmeg and salt. In another bowl, whip egg whites until soft peaks form. Gently fold into pumpkin mixture. Pour filling into pie shell.

 

Bake for 15 minutes in the preheated oven. While the pie is baking, prepare the streusel topping. In a small bowl, combine the flour, brown sugar and 1 tsp cinnamon. Blend in the cold butter with a fork or pastry blender until crumbly. Mix in the chopped nuts.

 

Remove pie from oven and sprinkle the topping over the pie. Reduce heat to 350 degrees. Bake an additional 40 minutes, or until set.

Dutch Apple Pie

  • 9" pie shell
  • 5 cups apples, peeled, cored and sliced
  • 2 tbsp flour
  • 2/3 cup sugar
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground allspice
  • 2 tbsp butter
  • 3/4 cup flour
  • 1/2 tsp ground cinnamon
  • 1/2 cup packed brown sugar
  • 3/4 cup rolled oats
  • 1 tsp lemon zest
  • 1/2 cup butter

Preheat oven to 425 degrees.

Place apples in a large bowl. In a separate bowl combine 2 tbsp flour, sugar, 1/2 tsp cinnamon, nutmeg and allspice. Mix well, then add to apples. Toss until apples are evenly coated. *Note: Now this is the tricky part....if you like your pies "juicy" leave just as is, if not, drain off some of the liquid so that the pie will be firmer.

Place apple mixture in pie shell and dot with 2 tbsp butter. Lay a sheet of aluminum foil lightly on top of filling, but do not seal. Bake for 10 minutes.

While filling is baking, make streusel topping. Combine 3/4 cup flour, 1/2 tsp cinnamon, brown sugar, oats and lemon peel in a bowl. Cut in 1/2 cup butter until mixture is crumbly. Remove filling from oven and sprinkle streusel on top.

Reduce heat to 375 degrees. Cover loosely with aluminum foil to prevent excess browning. Bake an additional 30-35 minutes, until streusel is browned and apples are tender.

World's Best Snickerdoodles

  • 3 3/4 cups flour
  • 1/2 tsp baking soda
  • 1/2 tsp cream of tartar
  • 1/2 tsp salt
  • 1 cup butter
  • 2 cups white sugar
  • 2 eggs
  • 1/4 cup milk
  • 1 tbsp vanilla extract
  • 1 tsp almond extract
  • 3 T. white sugar
  • 2 tsp brown sugar
  • 1 tsp cinnamon

 Sift together the flour, baking soda, cream of tartar, and salt, set aside.

In a medium bowl, cream together the butter and sugar. Stir in the eggs, milk, vanilla and almond extracts. Gradually stir in the dry ingredients until fully incorporated. Cover the bowl and chill for 1-2 hours.

Preheat oven to 375 degrees. Grease cookie sheets. In a shallow bowl or saucer, stir together the remaining white sugar, brown sugar and cinnamon. Roll the chilled dough into 1" balls, and then roll the balls in the sugar mixture. Place cookies 2" apart on the prepared cookie sheets. Bake for about 8 minutes in the preheated oven, until cookies begin to brown at the edges. Remove from baking sheets to cool on wire racks.

**NOTE: I keep the dough in the refrigerator while I'm baking. The dough is much easier to handle well chilled. ***

World's Best chocolate Chip Cookies

Ingredients:

  • 1 cup butter
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 3 1/2 cups flour
  • 1 cup brown sugar
  • 2 large eggs
  • 1 teaspoon baking soda
  • dash of salt
  • 1 bag chocolate chips (or combo of chips that you like ~ I use butterscotch chips & milk chocolate chips together)

Preheat oven to 350.

Cream butter and sugars.  Add eggs and vanilla.  Stir in dry ingredients. 

Bake for 8 to 11 minutes until golden brown.  Don't overbake.  Move to wire rack to cool.

Southern Peach Cobbler

  • 4 c. sliced fresh peaches
  • 1 1/2 c. sugar, divided
  • 1 tsp. almond extract
  • 1/2 c. margarine, melted
  • 3/4 c. flour
  • 2 tsp. baking powder
  • pinch salt
  • 3/4 c. milk

Toss peaches with 1 cup of the sugar; set aside. 

In a bowl, combine remaining sugar, flour, baking powder, salt and milk, stirring well. 

Pour melted butter in 2 qt. baking dish. Next, put peaches over top of butter. Pour flour mixture on top of peaches. DO NOT STIR! 

Bake uncovered at 350 degrees for 50-55 minutes

Chocolate Caramel Pecan Cheesecake

Ingredients:

  • 3 cups graham cracker crumbs
  • 1/2 cup butter, melted
  • 1 jar caramel ice cream topping
  • 1 cup pecans, chopped
  • 2 pkgs cream cheese, softened
  • 1/2 cup sugar
  • 2 eggs
  • 1 cup chocolate chips, melted
  • 1 teaspoon vanilla

Preheat oven 350.

Mix crumbs and butter, press onto the bottom and side of a 9 inch spring form pan. Bake 10 minutes.

Microwave caramel topping until warm. Pour over crust. Top with pecans (sometimes I add hazelnuts or walnuts to the pecans).

Beat cream cheese and sugar until well blended. Add eggs, one at a time. Mixing well after each addition. Blend in vanilla. Pour into crust.

Microwave the chocolate chips until melted. Spoon over cheesecake mixture. With a knife or spatula swirl chocolate through the cheesecake mixture to get a marbled affect.

Bake 45-50 minutes. Loosen cake from rim of pan, cool before removing. Keep refrigerated.

Bun Candy Bars

Ingredients

  • 1 bag milk chocolate chips
  • 1 bag butterscotch chips
  • 18 oz jar of peanut butter
  • 24 oz Spanish peanuts
  • 1/2 cup butter
  • 1/2 cup milk
  • 1/4 cup regular vanilla pudding mix (NOT instant)
  • 1 teaspoon vanilla or maple flavoring
  • 2 lbs powdered sugar

Melt together the chips and peanut butter in a microwave safe bowl, stir every 45 - 60 seconds.  Pour 1/2 of the mixture into a 9" by 13" buttered pan.  Chill. 

Meanwhile, melt the butter in a saucepan and mix in the milk and pudding mix.  Boil 1 minute.  Add vanilla extract or maple flavoring and powdered sugar.  Spoon over chilled chocolate in pan.

Add the Spanish peanuts to the remaining melted chocolate mixture.  Spoon over filling. 

Chill until firm.  Cut into bars.

Quick Apple Crisp

  • 5 granny smith apples, cored, peeled and sliced
  • 1 box yellow cake mix
  • 2 T. sugar
  • 1 T. ground cinnamon
  • 1/4 c. butter or margarine, melted

Preheat to 350 degrees.  Place apples in baking dish, top with cake mix. 

Combine sugar & cinnamon and then sprinkle over top of cake mix.

Drizzle with melted butter.

Bake 30-35 minutes.  Serve with whipped cream or ice cream.

Apple Dapple Cake

  • 2 cups sugar
  • 3 eggs
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 cups chopped pecans
  • 1 tablespoon cinnamon
  • 1 1/2 cups cooking oil
  • 3 cups unsifted all-purpose flour
  • 3 cups diced apples
  • 2 teaspoons vanilla



Preheat oven to 325° F

Combine sugar and oil and beat well. Add eggs one at a time, and vanilla. Sift dry ingredients together and and stir into egg mixture. Beat in apples and nuts.

Spray bundt pan well and pour. Bake for 60 to 75 minutes, or whenever bamboo skewer comes out clean.

Poke holes with two pronged meat fork while cake is still hot and pour glaze over top and let soak in. Let cake cook and remove from pan.

Glaze:

  • 1 cup dark brown sugar
  • 1/4 pound butter
  • 1/2 cup heavy cream


Combine all ingredients and boil for 3 minutes. Pour all but 1/3 over hot cake. Let cake cool and remove from pan. Pour rest of glaze over cake.

 


Cream Cheese Spritzes

  • 1 package (8 ounces) cream cheese, cut into chunks, room temperature
  • 1 cup butter or margarine, cut into chunks, room temp.
  • 1 cup granulated sugar
  • 1 and 1/2 teaspoons vanilla
  • 2 cups all-purpose flour
  • For decorations: red and/or green candied cherries



Heat oven to 350°.

In a medium size bowl or in a food processor beat or process cream cheese, butter, sugar and vanilla until fluffy. Gradually mix in flour until well blended.

Spoon 1 cup dough at a time into cookie press or pastry bag fitted with large star tip.

Press dough into 2-inch wreath shapes 1 and 1/2 inches apart on cookie sheet.

Gently press a cherry in center of each wreath.

Bake 12 to 15 minutes until edges and bottom are lightly browned. Remove to racks to cool.

Makes about 54 cookies.
