I used this book for an assisted living facility I worked at. Th diabetic residents loved the desserts I made from here. Also great for people on low carb diets or who just want to watch sugar intake.

This book uses no sugar, honey or artifical sweeteners. The sweetness comes entirely from the fruit themselves. A few of the recipes are:
orange blueberry cake
applesauce custard
fruit turnover
banana cloud tart
sesame fruit crackers
With this book, you really can have your cake and eat it too.

Sometimes cookbooks like this can be kind of "out there" as far as recipes are concerned. This book has down to home recipes like muffins, crepes, pastries, fruit fillings and syrups etc. Was very impressed with the book. I would highly recommend not just for diabetics but for anyone trying to cut down on the sugar intake in their diet.
