Ingredients

1/2 pound - ground round

1/2 cup - minced onion

1 package - taco seasoning
-
1 package - dry ranch dressing mix

1 can - black (ranch style) beans, drained

1 can - red kidney beans, drained

1 can - original or mild Rotel diced tomatoes

1 can - shoe peg corn
-
3 cans - water
-
1/2 cup - brown or white instant rice

1 6 oz can - tomato paste for those who like a richer tomato flavor

- tortilla chips, grated mozzerella cheese, ssour cream, optional
Directions
Brown beef and onions. Add taco seasoning and ranch dressing to browned meat. Add beans, rotel tomatoes, corn, water and tomato paste. Bring to a low boil. Simmer 20-30 minutes. Add minute rice and cook an additional 5 minutes. Serve with chips, grated cheese, and sour cream, if desired.
