Tempe's Favorite Pancakes

Dish: Pancackes & Waffles
Dish Type: Other
Difficulty: 2 / 10
Servings: about 12 pancakes
Prep Time: 5-10 min
Cook Time: 10-15min

Ingredients
  • 2 Tbsp - sugar
  • 1 tsp - baking powder
  • 1/2 tsp - baking soda
  • 1/2 tsp - salt
  • 2 - eggs
  • 1 cup - milk
  • 1 Tbsp - vinegar
  • 1/2 cup - plain or flavored yogurt
  • 1 1/4 cups - flour ( I use 3/4 c. white and 1/2 c. whole wheat)
Directions

The yogurt makes these pancakes nice and moist!

In a large bowl, mix together flour(s), sugar, baking powder, baking soda, and salt.

In a separate bowl, beat eggs, then add milk, vinegar, and yogurt.

Pour wet ingredients into dry and mix well.

Heat griddle to med-high. I pour a small amount of oil on and rub in with paper towel to prevent sticking.

Pour pancakes onto griddle with a ladle. Let cook until bubbly on top and just starting to dry a  little around the edges. Flip and let cook a little longer until cooked through.

Enjoy!

Note: I often double the recipe, but I don't usually double the amount of yogurt I put in.

Notes

Sorry I left out the flour when I first wrote sent the recipe...it's in there now!
