Hey all-

I'm not a veggie/vegan person, but I do want to incorperate healthier meals into my diet, so I was wondering  if anyone could suggest a good book for me (FYI I eat meat maybe once a day, I'd like to whittle it down to maybe a few times a week and then see about going further...)

I'm also interested in Skinny B*tch and was wondering if anyone has read it and what their opinions are? I realize it is a vegan book, but I'm open to learning more about healthy eating.

Any suggestions are appreciated!

Vegan with a Vengeance is one of my faves!  Even my non veggie boyfriend and friends love the stuff I make from there.

The original Moosewood cookbook is fantastic- lots of very good, healthy recipes in there.  I make the hummas and ratatouille recipes from that book all the time.

Jennifer-thank you that is perfect since my hubby isn't a veggie person, so maybe it will be easier to get him into it!

Lesley-I have been looking for a book with a ratatouille recipe ever since I saw the pixar movie-thank you!

any more s uggestions for this type or just for vegetables in general? I saw a couple on amazon by andrea chesman and wondered if anyone's heard of these (may not be vegetarian but were about vegetables, esp how to season and roast them for good flavor.)
