What is the one cookbook you always go to?  You know the one that never fails, the one you love!  For me it the Secrets of Baking and my 1st edition of the Better Homes and Gardens Junior Cookbook.  I am looking for tried and true cookbooks to get, not ones that I just look at and put on the shelf.

I love COOKWISE by Shirley O. Corriher.  Its not only a cookbook with 230 great-tasting "no fail" recipes. but it explains the hows and whys of successful cooking and baking.  It is a great reference book to look up and solve problems.  It also has formulas  and tips for developing your own recipes.  I'm always using it!

I very rarely use a cookbook, but my Bible is The New Settlemet Cookbook from 1954.  It has useful guides for roasting meats, etc., and some kick-butt pie crust recipes.

I have a notebook with all my recipes in it, including, as L referenced, roasting times, exchanges, and the like.  As I find a new recipe or new information, I glue it in.  I'm not a big cookbook person.  Have never really used them.  I have a few that folks have given me thru the years, and I treasure gifts from friends and family, especially in the form of books, but I rarely use them.

Hi...this is my first time in the forum, and have been a cookbook collector since I was 16 yrs. old...many moons ago. I love to cook and bake, and enjoy talking about cookbooks and recipes. I cook more from memory, but do use my books too. The first one I bought is one of my favorites, Better Homes & Garden Looseleaf Cookbook (1965), with The Fanny Farmer Cookbook coming in second. I learned to bake yeast breads, and not be afraid of using yeast with this book. I have so many more favorites in my huge collection, and enjoy reading them as well as using them.

The '64 Joy of Cooking of course! I love that they teach you the basics, not just the trendy recipes.

 "Gourmet" the one in the yellow cover, that came out 2-3 years ago. Some people think it's trendy, but it has all the traditional dishes I've ever wanted, plus great explanations of techniques, meat cuts, and other extremely useful info. I've often thought if I could only have one, that would be it.

I, too, love the old Joy of Cooking.  When I moved overseas for a 3 year assignment, I took the updated Joy, figuring that I would buy the Australian version of a basic cookbook to learn the differences between cooking in the US and cooking there.  Oops!  There isn't anything like Joy of Cooking in Australia!  And the new Joy didn't have all the basic things I needed in order to convert to Australian shopping and kitchens.  I bought a used early Joy at a used bookstore for a small fortune but at least I had the information I needed. 

There are a few winners in the old Better Homes and Garden looseleaf referrenced by Sandy.  It is my back-up after Joy of Cooking and the Yellow Gourmet one with the light yellow titles. 

The Cake Bible and anything by Rose Levy Beranbaum are consistently my go-to references on baking.  For high octane chocolate desserts, my favorite is still Death by Chocolate by Marcel Desaulniers.

 Those light yellow titles in the Gourmet cookbook bug me---too hard to read--but that is still my fave cookbook, though! Glad to see someone else noticed the same thing.
