I was taught this one -- The Perfect Burger -- when I was studying to be a cook/chef, and it is always a pleaser. Start with fresh 80/20 hamburger from the butcher shop and use before having to freeze it. Grind some fresh black pepper into the meat along with some salt and grated cheddar cheese, then form into patties, rub the patties with a little olive oil and then salt and pepper the outside, then drizzle a bit of olive oil in a hot skillet at about 350 and fry the burgers for about 5 minutes on each side or until done. Top with a special sauce made of 70% mayo/30% ketchup/fresh grated black pepper. Serve on lightly toasted buns.
