My counter is overflowing with tomatoes and it's time to put some away. I'd love to hear what others do before storing in freezer. I usually parboil, skiin, de-seed & chop up before placing in freezer bags. What do you do? Last Edited on: 9/25/08 9:26 AM ET - Total times edited: 1 |

I do what you do when I have the time. If I'm short of time, I wash them and pack the tomatoes whole and uncooked in gallon bags in the freezer. Then, when I want to use them I drop them, still frozen, in boiling water til the skins crack, removed them from the water and chop while they are still solid. Both work well but I prefer the first method. |

Mom used to blanch, peel the skin and then freeze them whole in ziplock baggies.
