I'd like to make my own baking mix. All the recipes I can find have shortening as a major ingredient. I'm trying to cut trans fats OUT of my diet, not put more in. I know it can be done--one of the box mixes doesn't use hyrdogenated oil. I want to find a recipe that doesn't either; it seems a silly thing to be buying. Thanks! |

Just use butter instead of shortening. But be aware that butter has 20-30% more liquid than shortening does, so you may need to adjust the dry ingredients a bit to get the right consistency. |

If you're going the butter route, just know that you will have to refrigerate or freeze it. Because it will ruin on your shelf (remember the water content). If you want it for your shelf and don't want to use shortening, I suggest that you just mix it up without the shortening and add what you oil/butter/whatever you need at baking time. |
