This cookbook written in 1966 gives TRUE Spanish cooking not the variations of Tex-Mex or Mexican but the way the dish was made in Spain. Book starts with Tapas (appetizers, salads, gazpacho, soups and continues into main entrees of tortillas, paella, empanadas, fish, fowl, meat, vegetables, sauces and deserts. Great cookbook with over 200 authentic Spanish recipes
